In the heart of the estate, the mill is where knowledge and technology work in service of the olive tree. Renovated in 2015, it features two independent extraction lines with a total capacity of up to 5 tons per hour, allowing the fruit to be processed immediately after harvesting.

This fast and precise process ensures that each olive retains its aromas, freshness, and phenolic richness intact. Nothing is left to chance: thermal control, absolute hygiene, and pre-storage filtration ensure a pure, stable, and top-quality oil.

Each phase—from the reception area to the final storage—is monitored to ensure that the result is always consistent and true to the sensory profile that defines Finca La Torre. Here, innovation doesn’t replace tradition; it perfects it.

Reception
Yard

Renovated in 2019, our reception yard marks the beginning of the process. With a capacity of 9-10 tons per hour, it ensures the cleaning and washing of the fruit—only when necessary—immediately.

Unlike other mills, there are no storage hoppers here: the olives are processed as soon as they arrive, preserving their freshness and preventing oxidation. Every second counts when striving for excellence.

Almazara

Our mill has two independent extraction lines, with a total capacity of 3 to 5 tons per hour. This infrastructure allows us to process the fruit instantly, produce different oils simultaneously, and maintain perfect consistency in each harvest. Thermal control and absolute hygiene are essential to preserve the aromatic integrity of the oil. After filtration, the product goes directly to storage, minimizing any risk that could alter its purity.

Cellar

Our cellar, progressively remodeled, features fourteen 10,000-liter stainless steel tanks, equipped with automatic nitrogen inerting systems. The space is fully climate-controlled, ensuring a constant temperature that protects the freshness and stability of the oil throughout the storage period. It is a place of stillness and watchfulness: here, the oil rests, refines, and reaches the serenity that defines the character of Finca La Torre.

Bottling room

Depending on the needs, we have an automatic bottling line and two smaller manual lines, providing us with versatility and agility for each order. Bottling is done only upon confirmed orders, keeping the oil in storage until the last moment to ensure its optimal preservation. Each bottle is sealed with a promise: the harvest date on its label, a visible proof of transparency and freshness.
