At the heart of the estate, the mill brings together knowledge and technology in service of the olive tree. Renovated in 2015, it features two independent extraction lines with a total capacity of up to five tons per hour, allowing the olives to be processed immediately after harvest.
This fast, precise process preserves the fruit’s aromatic and phenolic integrity, ensuring freshness and purity in every drop. Nothing is left to chance: thermal control, meticulous hygiene, and precision filtration guarantee a stable, top-quality oil.
From reception to storage, every phase is carefully monitored to maintain the consistent sensory profile that defines Finca La Torre. Here, innovation does not replace tradition — it perfects it.
Reception
Yard
Renovated in 2019, our reception yard marks the true beginning of the process. With a capacity of 9–10 tons per hour, it allows the fruit to be cleaned and washed — only when necessary — and processed immediately.
Unlike conventional mills, we use no storage hoppers. Each batch of olives is processed as soon as it arrives, preserving maximum freshness and preventing oxidation. Because when it comes to excellence, every second matters.
Almazara (the Mill)
Equipped with two independent extraction lines capable of processing up to five tons per hour, our mill is designed for precision and speed. This system allows different varieties to be milled simultaneously while maintaining absolute consistency. Controlled temperature and impeccable hygiene safeguard the aromatic integrity of the oil, which, once filtered, goes directly into storage — pure and unaltered.
Cellar
Our cellar, continuously renovated, features fourteen 10,000-liter stainless steel tanks equipped with automatic nitrogen inerting systems. The space is fully climate-controlled to maintain a constant temperature that preserves the freshness and stability of the oil throughout its storage. It is a place of stillness and care, where the oil rests, refines, and reaches the serenity that defines the character of Finca La Torre.

Bottling room
Our bottling area combines an automatic line with two smaller manual ones, providing the versatility and agility required for each order. Bottling takes place only upon confirmed demand, keeping the oil in storage until the last possible moment to ensure optimal preservation. Every bottle is sealed with a promise — its harvest date, a visible mark of transparency and freshness.
