We follow a certified organic and biodynamic model that excludes all chemicals and synthetic fertilizers, guided by the natural rhythms of the land. The olive grove regulates itself through biodiversity, organic composting, and respect for lunar and seasonal cycles.
Early harvesting, immediate milling, and cold extraction below 22°C are part of a method designed to preserve the oil’s aromas, freshness, and natural compounds — its polyphenol profile, intensity, and sensory harmony.
