At Finca La Torre, quality is not a standard, it is a conviction. Every decision—from soil care to final bottling—follows the same philosophy: to obtain the purest oil possible, preserving the integrity of the fruit and the balance of the ecosystem that makes it possible.
We work with a certified organic and biodynamic agricultural model that excludes the use of chemicals and synthetic fertilizers and is based on the natural rhythms of the land. The olive grove self-regulates thanks to its biodiversity, organic composting, and respect for lunar and seasonal cycles.
Early harvesting, immediate milling, and cold extraction (below 22 °C) are part of a method designed to preserve the oil’s aromas, freshness, and natural compounds—its polyphenol profile, intensity, and sensory balance.
Each harvest is monitored with scientific precision and artisanal sensitivity, combining advanced technology with the expertise of those who know every tree. In this way, we achieve a traceable, stable, and authentic product that expresses the truth of the land: an oil born from absolute respect for nature and the craft.
