Intense fruity aroma of freshly cut grass and olive leaf. In the mouth, bitter, progressive and persistent spiciness with hints of green almond, apple, and banana peel. Complex and balanced.

100% Hojiblanca. This olive can be used either for table olives or to produce oil. Without a doubt, it is the best adapted to limestone soils and drought conditions.

 

It is excellent for a wide variety of dishes, such as light salads, meat marinades, oily fish, meat and fish carpaccios, intense emulsions, vinaigrettes, cold and hot creams, pasta, stir-fries, vegetable preserves…
