arbequina
This variety has become very widespread in recent years due to its easy mechanization. Its fruits are very characteristic, being very small, round-shaped, and usually appearing grouped in clusters. Its oil yield is medium, although it is very consistent in terms of production.

cornicabra
Predominantly cultivated in the central area of the Iberian Peninsula, it is characterized by its great adaptation to limestone soils and adverse weather conditions. Its resistance to detachment is high, making mechanization difficult. The alternate bearing (alternation of abundant harvests with poor or no harvests) is notable, but in contrast, its oil yield is high.

hojiblanca
Mainly cultivated in the provinces of Córdoba and Málaga, it can be used either for table olives or to produce oil. Without a doubt, it is the best adapted to limestone soils and drought, although it has a strong tendency for alternate bearing.

picuda
Very common in mountain olive groves of the province of Córdoba, sometimes alternating with Hojiblanca. It shows great rusticity and high vigor. Its production is high although it also has a tendency for alternate bearing. Its resistance to detachment and sensitivity to tuberculosis make it a not very widespread variety.
